Ingredients
  

  • 2 tablespoons olive oil
  • 1 pound chicken breast diced
  • 1 small onion chopped
  • 3 garlic cloves minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • ½ cup Parmesan cheese grated
  • ½ cup sun-dried tomatoes chopped
  • 1 teaspoon Italian seasoning
  • ½ teaspoon chili flakes optional
  • Salt and pepper to taste
  • 2 cups baby spinach

Instructions
 

Cook the Chicken

  • Heat olive oil in a big pot. Add diced chicken. Cook until it turns golden brown. Take it out and set aside.

Cook Onion and Garlic

  • In the same pot, add chopped onion and garlic. Cook for a few minutes until soft and nice-smelling.

Add Broth and Spices

  • Pour chicken broth into the pot. Add Italian seasoning, salt, and pepper. Stir well to mix.

Add Chicken Back

  • Put the cooked chicken back into the pot. Let it simmer for 10 minutes. This helps blend the flavors.
