Ingredients
  

  • 12 oz spaghetti or linguine pasta
  • 3 tbsp olive oil
  • 4 garlic cloves minced
  • 1 can diced tomatoes 14 oz
  • 1/2 cup fresh basil leaves chopped
  • 1/2 tsp red chili flakes optional
  • Salt to taste
  • Black pepper to taste
  • Fresh Parmesan cheese grated

Instructions
 

Boil the pasta

  • Fill a big pot with water. Add salt. Let it boil. Drop in pasta. Cook until tender but firm. Drain with a strainer. Save one cup pasta water.

Heat the oil

  • Place frying pan on medium heat. Pour in olive oil. Let it warm.

Cook garlic

  • Add garlic to pan. Stir for 1 minute. Do not burn. Smell should be nice.

Add tomatoes

  • Pour diced tomatoes. Stir well. Let cook 8–10 minutes. Sauce becomes rich and tangy.

Add pasta water

  • Add a little pasta water. Sauce becomes smooth and coats pasta.

Season sauce

  • Add salt, pepper, and chili flakes. Stir well. Taste and adjust.

Mix pasta and sauce

  • Add pasta to pan. Toss gently until well coated.

Add basil

  • Sprinkle chopped basil. Stir lightly. Fresh flavor comes out.

Serve hot

  • Put pasta in bowls. Sprinkle Parmesan cheese before serving.

Notes

  • Use fresh basil for strong flavor.
  • Do not overcook pasta. Keep it firm.
  • Save pasta water for sauce.
  • Use good olive oil.
  • Add chili flakes if you like spice.
