Ingredients
  

  • 1 cup all-purpose flour

  • 1 teaspoon sugar
  • ½ teaspoon salt
  • ¼ teaspoon baking soda
  • 1 cup cold club soda
  • Oil for deep frying
  • 1 pound white fish fillets like cod or pollock

Prepare the Fish

  • Pat the fish fillets dry using paper towels. Cut them into medium pieces. Removing extra moisture helps the batter stick better and fry evenly without splashing oil.

Heat the Oil

  • Pour oil into a deep pan. Heat it to 350°F (175°C). Use a thermometer for best results. Hot oil is key for crispy texture and golden color.

Mix the Dry Ingredients

  • In a large bowl, add flour, cornstarch, baking powder, sugar, salt and baking soda. Whisk everything well. Make sure there are no lumps in the mixture.

Add the Club Soda
