Ingredients
  

  • 250 g mutton meat boneless
  • 200 g mutton liver
  • 150 g mutton kidneys
  • 150 g mutton heart
  • 2 tbsp butter or ghee
  • 2 onions chopped
  • 3 tomatoes chopped
  • 2 green chilies sliced
  • 1 tbsp ginger paste
  • 1 tbsp garlic paste
  • 1 tsp red chili powder
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • Salt to taste
  • Fresh coriander for garnish
  • Lemon slices

Instructions
 

Step 1:

  • Wash meat, liver, kidney, and heart well. Cut small.

Step 2:

  • Heat butter on a big pan or wok.

Step 3:

  • Add onion, ginger, and garlic. Cook until light brown.

Step 4:

  • Add meat pieces. Cook on high flame.

Step 5:

  • Add tomatoes, chilies, and spices. Mix well.

Step 6:

  • Chop meat while cooking. This makes the “kata-kat” sound.

Step 7:

  • Cook until meat is soft and oil shows.

Step 8:

  • Garnish with coriander and lemon slices.

Notes

  • Use fresh meat and organs always.
  • Cook on high flame for smoky taste.
  • Add butter for rich flavor.
  • Chop meat while cooking for real sound.
  • Serve hot with naan.
