Instructions
 

Prepare the Ramekins

  • Grease the ramekins with butter. Sprinkle with a little flour or grated cheese. This helps the soufflé rise evenly. Preheat oven to 375°F (190°C).

Make the Béchamel

  • Melt butter in a saucepan over medium heat. Add flour and stir for 1–2 minutes. Slowly whisk in warm milk until smooth. Cook until thickened.
