Ingredients

  • 1 pre-made pie crust or homemade
  • 6 slices bacon chopped
  • 1 cup heavy cream
  • 1/2 cup milk
  • 3 large eggs
  • 1/2 cup grated Swiss cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon nutmeg
  • 2 tablespoons butter

Instructions

Prepare the crust

  • Place the pie crust into a pie dish. Press it gently into the edges. Trim extra dough. Chill it in the fridge for 15 minutes before baking.

Pre-bake the crust

  • Preheat oven to 190°C (375°F). Place parchment paper and weights on crust. Bake for 10 minutes. Remove weights and bake again for 5 minutes.

Cook the bacon

  • Heat a frying pan on medium heat. Add chopped bacon. Cook until crispy and golden. Remove and place on paper towels to drain excess oil.

Prepare the filling

  • In a mixing bowl, add eggs, cream and milk. Whisk until smooth. Add salt, pepper, and nutmeg. Mix well until everything is combined.

Add cheese and bacon

  • Spread cooked bacon evenly over the crust. Sprinkle grated Swiss cheese on top. This creates a rich and flavorful base for the quiche.

Pour the mixture

  • Slowly pour the egg mixture over the bacon and cheese. Make sure it spreads evenly. Do not overfill the crust to avoid spilling.

Bake the quiche

  • Place the dish in the oven. Bake at 180°C (350°F) for 30–35 minutes. The center should be set but slightly soft when touched.

Cool before serving

  • Remove the quiche from the oven. Let it cool for 10 minutes. This helps the filling set properly and makes slicing easier.

Notes

  • Use cold pie dough for a flaky crust
  • Do not overcook the eggs, or it becomes rubbery
  • Add onions for extra flavor if you like
  • Use fresh cream for the best taste
  • Let the quiche rest before cutting
  • Try different cheeses like Gruyère
