Ingredients

  • 1 zucchini chopped
  • 1 cup green beans trimmed and chopped
  • 1 can 14 oz diced tomatoes
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions
 

Prepare the Vegetables

  • Wash and chop all vegetables into small, even pieces for quick cooking.

Heat the Pot

  • Add olive oil to a large pot. Heat over medium heat until warm.

Cook Onion and Garlic

  • Add chopped onion and garlic. Sauté for 2-3 minutes until fragrant and soft.

Add Carrots and Celery
