  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh parsley finely chopped
  • 1 garlic clove finely minced
  • Salt to taste
  • Black pepper to taste

Instructions
 

Prepare the green beans

  • Wash the beans well, trim the ends neatly and keep them ready for fast cooking in boiling water later on.

Boil water in a pot

  • Fill a large pot with water, add salt and bring it to a steady boil for fresh green beans.

Cook the green beans

  • Add beans into boiling water and cook until bright green and tender crisp, usually just a few short minutes only.

Drain and cool

  • Drain the beans in a colander, then rinse briefly with cold water to stop cooking and keep color bright.

Make the gremolata mix

  • In a bowl combine parsley, garlic, lemon zest, lemon juice and olive oil to form fresh, fragrant topping mixture.

Season the beans
