Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 2 carrots peeled and diced
  • 2 celery stalks diced
  • 3 cloves garlic minced
  • 1 medium zucchini diced
  • 1 medium yellow squash diced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 can 14.5 oz diced tomatoes
  • 6 cups vegetable or chicken broth
  • 1 can 15 oz cannellini beans, drained and rinsed
  • 1 cup small pasta like ditalini or elbow
  • Salt and black pepper to taste
  • 2 cups chopped kale or spinach
  • Grated Parmesan cheese for serving

Instructions
 

Heat the Olive Oil

  • Heat olive oil in a large stockpot over medium heat. Add chopped onion, carrots and celery. Cook until vegetables are soft and fragrant, about 5–7 minutes.

Add Garlic and Herbs

  • Add minced garlic, oregano, thyme and bay leaf. Stir for 1–2 minutes until fragrant. This step builds the soup’s base flavor.

Add Squash and Tomatoes

  • Add diced zucchini and yellow squash. Stir to combine. Pour in the diced tomatoes with juice. Mix gently so vegetables are evenly coated.

Add Broth and Beans

  • Pour in 6 cups of broth. Add the drained cannellini beans. Stir and bring to a boil over medium-high heat.

Simmer the Soup

  • Lower heat to medium-low. Cover partially and simmer for 20 minutes. Vegetables will soften and flavors will blend beautifully.

Cook the Pasta

  • Add 1 cup of small pasta. Simmer until pasta is tender, about 8–10 minutes. Stir occasionally to prevent sticking.

Add Greens and Season

  • Stir in chopped kale or spinach. Cook 2–3 minutes until wilted. Season with salt and black pepper to taste. Remove bay leaf before serving.

Serve the Soup

  • Ladle soup into bowls. Sprinkle grated Parmesan cheese on top. Serve warm with crusty bread for a complete meal.
