  • 2 tablespoons butter softened
  • 1 tablespoon olive oil
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 lemon halved
  • 4 garlic cloves
  • 1 small onion cut into chunks
  • 2 –3 fresh thyme sprigs
  • 1 teaspoon paprika

Instructions
 

Preheat the Oven

  • Preheat your oven to 425°F (220°C). A hot oven helps create crispy skin. Place a rack in the middle for even roasting.

Prepare the Chicken

  • Pat the chicken dry with paper towels. This step is important for crispy skin. Remove any extra moisture before seasoning.

Season the Chicken

  • Rub butter and olive oil all over the chicken. Sprinkle salt, pepper and paprika evenly. Make sure to cover every part for full flavor.

Stuff the Cavity
