Ingredients
  

  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 medium onion chopped
  • 2 garlic cloves minced
  • 1 can 28 ounces crushed tomatoes
  • 3 cups chicken or vegetable broth
  • ½ cup dry orzo pasta
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon sugar
  • ¼ cup heavy cream or milk
  • 2 tablespoons grated Parmesan cheese
  • Fresh basil leaves for garnish

Instructions
 

Heat the Oil and Butter

  • Warm olive oil and butter in a large pot on medium heat. Let butter melt.

Cook the Onion and Garlic

  • Add onion and garlic. Cook until soft and golden. Stir often to avoid burning.

Add the Tomatoes

  • Pour crushed tomatoes in the pot. Stir with onion and garlic.

Add Broth and Seasonings

  • Add chicken broth, salt, pepper, and sugar. Stir and let soup simmer 20 minutes.

Blend the Soup

  • Use a hand blender to make soup smooth. Blend half only if you like chunks.

Cook the Orzo

  • Add dry orzo pasta. Cook 8–10 minutes until pasta is soft.

Add Cream and Cheese

  • Stir in cream and Parmesan cheese. Mix until soup is creamy and rich.

Taste and Adjust

  • Taste soup. Add more salt or pepper if needed.

Garnish and Serve

  • Serve in bowls. Add fresh basil leaves and more cheese on top.
