Ingredients
  

  • 2 cups cooked sweet potato mashed
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 large eggs
  • 1 cup heavy cream
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 unbaked pie crust

Instructions
 

Preheat the oven

  • Preheat oven to 350°F. Place the pie crust in a pie dish.

Cook sweet potatoes

  • Boil or bake sweet potatoes until soft. Peel and mash them well.

Mix sugars and spices

  • In a bowl, mix sugar, cinnamon, nutmeg, ginger and salt.

Add eggs to sugar

  • Beat in eggs one at a time. Mix until the blend is smooth.

Add sweet potato

  • Add mashed sweet potato to the mixture. Stir until creamy and smooth.

Add milk and cream

  • Pour in milk, heavy cream and vanilla. Mix until fully combined.

Fill the pie crust

  • Pour the filling into the unbaked pie crust carefully.

Bake the pie

  • Bake for 45 to 50 minutes until set. The center should slightly jiggle.

Cool the pie

  • Let the pie cool on a rack for two hours. This helps it set properly.

Chill before serving

  • Chill the pie in the fridge for at least one hour. Slice and serve cold or room temperature.

Notes

  • Use fresh sweet potatoes for best flavor.
  • Mash the sweet potatoes until very smooth.
  • Do not overbake to keep it creamy.
