Ingredients
  

  • 4 large artichokes
  • 1 cup breadcrumbs
  • ½ cup grated parmesan cheese
  • 3 garlic cloves minced
  • ¼ cup fresh parsley chopped
  • ¼ cup olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1 cup vegetable broth

Instructions
 

Prepare the Artichokes

  • Rinse the artichokes under cold water to remove dirt. Trim the stem and cut one inch from the top. Use kitchen scissors to trim leaf tips. Gently spread the leaves open.

Make the Breadcrumb Filling

  • In a mixing bowl, combine breadcrumbs, parmesan cheese, minced garlic, parsley, lemon zest, salt and pepper. Mix everything well. Slowly add olive oil and stir until the mixture becomes moist.

Stuff the Artichokes

  • Carefully open the artichoke leaves with your fingers. Spoon the breadcrumb mixture between the leaves. Fill the center area as well. Press gently so the filling stays inside.

Prepare the Baking Dish

  • Place the stuffed artichokes upright in a baking dish. Pour vegetable broth and lemon juice into the bottom. The liquid creates steam and keeps the artichokes soft.

Bake the Artichokes

  • Cover the baking dish tightly with aluminum foil. Bake in a preheated oven at 375°F for about 40 minutes. The leaves should become tender and the filling golden.

Serve and Enjoy

  • Remove the artichokes from the oven carefully. Let them cool slightly before serving. Drizzle extra olive oil on top if desired. Serve warm and enjoy this tasty stuffed artichoke recipe.
