Ingredients
  

  • 1 ½ pounds flank steak or ribeye
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary
  • 4 crusty sandwich rolls or baguette pieces
  • 2 tablespoons butter
  • 1 cup arugula or fresh greens
  • 1 red onion thinly sliced
  • ½ cup mayonnaise
  • 1 tablespoon Dijon mustard

Instructions
 

Prepare the Steak

  • Pat steak dry. Rub with olive oil, salt, pepper, garlic powder and rosemary.

Heat the Pan

  • Heat a grill pan or skillet on high heat until very hot.

Cook the Steak

  • Place steak in pan. Cook five minutes per side for medium doneness.

Rest the Steak

  • Remove steak from pan. Let it rest ten minutes before slicing.

Toast the Bread

  • Cut rolls in half. Spread butter inside. Toast until golden.

Make the Sauce

  • Mix mayonnaise and Dijon mustard in a small bowl. Stir until smooth.

Slice the Steak

  • Slice steak thinly against the grain. This keeps it tender.

Assemble the Sandwich

  • Spread sauce on bread. Add steak slices, onions, and arugula.

Serve Warm

  • Close the sandwich gently. Serve warm and enjoy immediately.
