Ingredients
  

  • Flank or skirt steak – 1 lb
  • Olive oil – 2 tablespoons
  • Bell peppers – 3 sliced (red, yellow, green)
  • Onion – 1 large sliced
  • Garlic – 2 cloves minced
  • Lime juice – 2 tablespoons
  • Chili powder – 1 teaspoon
  • Cumin – 1 teaspoon
  • Paprika – ½ teaspoon
  • Salt – ½ teaspoon
  • Black pepper – ¼ teaspoon
  • Flour or corn tortillas – 8
  • Optional toppings: sour cream guacamole, shredded cheese, chopped cilantro

Instructions
 

Prepare the Steak

  • Pat steak dry and season with salt, black pepper, chili powder, cumin and paprika. Rub seasoning evenly for best flavor.

Slice the Vegetables

  • Slice bell peppers and onion into thin strips. Mince garlic and set aside for cooking with vegetables.

Cook the Vegetables

  • Heat 1 tablespoon olive oil in a skillet over medium-high heat. Add peppers, onion, and garlic. Sauté 5–6 minutes until slightly tender and fragrant.

Cook the Steak

  • Heat remaining olive oil in the same skillet. Add steak and sear 4–5 minutes per side for medium. Adjust time for preferred doneness.

Rest and Slice the Steak

  • Remove steak from skillet and let rest 5 minutes. Slice thinly against the grain for maximum tenderness.

Combine Steak and Vegetables

  • Return sliced steak to skillet. Toss with cooked peppers and onions. Add lime juice for brightness. Mix well for flavor.

Warm the Tortillas

  • Heat tortillas on a dry skillet or microwave until soft. Keep wrapped in a towel to stay warm while serving.

Serve the Fajitas

  • Place steak and vegetables on tortillas. Add desired toppings like sour cream, guacamole or cilantro. Serve immediately and enjoy.
