Ingredients
  

  • Puff pastry – 1 sheet thawed
  • Fresh spinach – 3 cups chopped
  • Cream cheese – 4 ounces softened
  • Feta cheese – ½ cup crumbled
  • Garlic – 1 clove minced
  • Olive oil – 1 tablespoon
  • Salt – ½ teaspoon
  • Black pepper – ¼ teaspoon
  • Egg – 1 beaten

Instructions
 

Preheat the Oven

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.

Cook the Spinach

  • Heat olive oil in a pan. Add garlic. Cook briefly. Add spinach. Cook until wilted. Cool fully.

Mix the Filling

  • In a bowl, mix spinach, cream cheese, feta, salt and pepper. Stir until smooth and creamy.

Prepare the Pastry

  • Roll puff pastry on a floured surface. Cut into equal squares or rectangles, based on preference.

Add the Filling

  • Place a spoonful of spinach mixture in the center of each pastry piece. Do not overfill.

Fold the Pastry

  • Fold pastry over filling into triangles or rectangles. Press edges gently to seal well.

Brush with Egg

  • Brush tops with beaten egg. This helps create a golden and shiny crust during baking.

Bake the Pastry

  • Place pastries on baking sheet. Bake for 22 to 25 minutes until puffed and golden brown.

Cool Slightly

  • Remove from oven. Let cool five minutes before serving. Filling will set slightly inside.

Notes

  • Drain spinach well to avoid soggy pastry.
  • Keep puff pastry cold before baking.
  • Do not overfill the pastry pieces.
  • Seal edges tightly to stop leaks.
