Ingredients
  

  • 20 large white mushrooms
  • 1 pound Italian sausage casing removed
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 cup bread crumbs
  • 1 cup grated Parmesan cheese
  • 4 tablespoons olive oil
  • 2 tablespoons fresh parsley chopped
  • Salt to taste
  • Black pepper to taste

Instructions
 

Prepare the mushrooms

  • Clean mushrooms gently with damp towel and remove stems. Keep caps whole for stuffing. Chop stems small for filling later.

Cook the sausage

  • Heat skillet and add olive oil and sausage. Break sausage into small pieces while cooking. Cook fully until browned and fragrant.

Add vegetables

  • Add chopped mushroom stems, onion, and garlic to skillet. Cook until soft and lightly golden. Stir well so flavors mix nicely.

Make the filling

  • Place sausage mix in bowl. Add bread crumbs, cheese, parsley, salt and pepper. Mix until thick stuffing mixture forms easily.

Stuff the mushrooms

  • Fill each mushroom cap with sausage stuffing. Press slightly so filling stays in place. Arrange them on lined baking sheet.

Bake the mushrooms

  • Bake in preheated oven until tops are golden. Mushrooms become tender and juicy inside. Remove from oven and cool slightly before serving.
