Ina Garten’s sausage and peppers recipe is a great meal for busy weeknights. It is simple, hearty and full of flavor. The sausages get browned and juicy.

Ingredients
  

  • 1 pound Italian sausages mild or spicy
  • 2 tablespoons olive oil
  • 1 large onion sliced
  • 3 bell peppers red, yellow, green, sliced
  • 4 cloves garlic minced
  • 1 can 14 oz diced tomatoes
  • 1/2 cup chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

Brown the Sausages

  • Heat oil in a skillet. Brown sausages on all sides. Remove and set aside.

Cook the Onions and Peppers

  • Add onions and peppers to the pan. Cook until soft and slightly charred.

Add Garlic

  • Stir in minced garlic. Cook for one minute until fragrant.

Add Tomatoes and Broth

  • Pour in diced tomatoes and chicken broth. Stir well.

Add Herbs

  • Add oregano, basil, salt and pepper. Mix everything well.

Return Sausages to Pan

  • Put sausages back into the pan. Nestle them in the sauce.

Simmer

  • Cover and simmer for 15 minutes. Make sure sausages cook through.

Garnish and Serve

  • Sprinkle parsley on top. Serve hot with bread or pasta.

Notes

  • Use fresh bell peppers for bright flavor.
  • Brown sausages well for extra taste.
  • Don’t overcook peppers; keep them slightly crunchy.
  • Use chicken broth for a richer sauce.
  • Let it simmer for best flavor.
