Ingredients
  

  • 4 salmon fillets about 6 oz each
  • 2 cups cherry tomatoes
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 small shallot finely chopped
  • 1 tablespoon fresh basil chopped
  • 1 tablespoon fresh parsley chopped
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes optional
  • 1 tablespoon lemon juice

Instructions
 

Prepare the Salmon

  • Pat the salmon fillets dry using paper towels. Season both sides with salt and black pepper. This step helps the fish cook evenly and keeps the flavor balanced.

Heat the Pan

  • Place a large skillet on medium heat. Add olive oil and allow it to warm slowly. When the oil becomes shiny, the pan is ready for cooking.

Cook the Salmon

  • Place salmon fillets skin-side down in the hot pan. Cook for about 5 minutes. Turn the fillets carefully and cook another 3 minutes until tender.

Remove the Salmon

  • Transfer the cooked salmon to a plate. Keep it warm. Do not overcook the fish because salmon becomes dry if left in heat too long.

Cook the Garlic and Shallots

  • In the same pan, add chopped shallots and minced garlic. Stir gently for about 1 minute. Cook until they smell fragrant and slightly soft.

Add the Tomatoes

  • Add the cherry tomatoes to the skillet. Stir well so they coat in olive oil. Cook for 8–10 minutes until tomatoes soften and begin to burst.

Season the Tomatoes

  • Sprinkle salt, pepper and red pepper flakes. Stir gently while the tomatoes cook. They will release juices and create a light sauce.

Finish the Dish

  • Return the salmon to the skillet. Spoon the melted tomatoes over the fish. Add lemon juice and fresh herbs. Cook 1–2 minutes more.

Serve the Salmon

  • Turn off the heat and serve immediately. Place salmon on plates and spoon extra tomatoes on top. Enjoy this warm and fresh dish.
