Ingredients
  

  • Cherry or grape tomatoes – 1 pound halved
  • Olive oil – 2 tablespoons
  • Garlic – 2 cloves minced
  • Salt – ½ teaspoon
  • Black pepper – ¼ teaspoon
  • Fresh basil – ¼ cup chopped
  • Balsamic vinegar – 1 teaspoon optional

Instructions
 

Preheat Oven

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare Tomatoes

  • Wash tomatoes and cut them in half. Place them in a mixing bowl for tossing with oil and seasoning.

Add Oil and Seasoning

  • Add olive oil, minced garlic, salt and black pepper. Toss gently to coat all tomatoes evenly.

Arrange on Baking Sheet

  • Place tomatoes cut side up on the baking sheet. Make sure they are in a single layer for even roasting.

Roast in Oven

  • Bake for 25–30 minutes until tomatoes are soft, slightly caramelized, and their skins begin to wrinkle.

Add Fresh Basil

  • Remove from oven. Sprinkle chopped fresh basil over the roasted tomatoes. Add balsamic vinegar if using.

Serve Immediately

  • Transfer to a serving dish. Serve warm as a side or appetizer. Enjoy the sweet, herby flavor in every bite.
