Ingredients
  

  • 2 pounds celery root celeriac, peeled and chopped
  • 1 cup heavy cream
  • 1/2 cup unsalted butter
  • 1/2 cup milk
  • 1 garlic clove minced
  • Salt and black pepper to taste
  • Optional: 1/4 teaspoon nutmeg

Instructions
 

Prepare the Celery Root

  • Peel and chop celery root into small cubes. This helps them cook evenly.

Boil the Celery Root

  • Put celery root in a pot. Cover with water and bring to boil.

Cook Until Soft

  • Boil for 20 to 25 minutes. Cook until pieces are very tender.

Drain the Water

  • Drain the celery root well. Return to the pot while still hot.

Blend with Cream and Butter

  • Add cream, butter, milk and garlic. Blend until smooth and creamy.

Season the Puree

  • Add salt, pepper and nutmeg. Taste and adjust seasoning.

Warm the Puree

  • Warm the puree on low heat for 2 minutes. Stir gently to keep it smooth.

Serve Hot

  • Spoon the puree into a bowl. Garnish with a pat of butter or parsley.

Notes

  • Cut celery root into even pieces for uniform cooking.
  • Use a blender for the smoothest texture.
  • Warm the cream and milk before blending.
  • Don’t overblend, or it can become gluey.
  • Taste and adjust salt at the end.
