Ingredients

  • 8 slices rye bread
  • 1 pound sliced corned beef
  • 8 slices Swiss cheese
  • 1 cup sauerkraut drained
  • 1/2 cup Russian dressing
  • 4 tablespoons unsalted butter softened

Instructions

Prepare the Bread

  • Lay out rye bread slices on a clean surface. Spread softened butter evenly on one side of each slice.

Add Dressing

  • Turn bread slices over. Spread Russian dressing on the unbuttered side. Make sure it covers the bread evenly.

Layer the Ingredients

  • Place Swiss cheese on four slices. Add corned beef evenly. Top with drained sauerkraut. Add another slice of cheese.

Close the Sandwich

  • Place remaining bread slices on top. Buttered sides should face outward. Press gently to hold layers together.

Heat the Skillet

  • Heat a large skillet over medium heat. Make sure pan is hot but not smoking.

Grill the Sandwich

  • Place sandwiches in skillet carefully. Cook for about four minutes per side. Bread should turn golden brown.

Melt the Cheese

  • Press lightly with a spatula while cooking. This helps cheese melt fully and layers stick together nicely.

Slice and Serve

  • Remove sandwiches from skillet. Let rest one minute. Slice in half and serve warm.

Notes

  • Drain sauerkraut well to avoid soggy bread.
  • Use good quality corned beef.
  • Cook on medium heat for even browning.
  • Spread butter evenly on bread.
  • Serve immediately for best texture.
