Ingredients

For the Cupcakes:

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 tablespoon cocoa powder
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon red food coloring
  • 1 teaspoon white vinegar

For the Cream Cheese Frosting:

  • 8 oz cream cheese softened
  • ½ cup unsalted butter softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

Preheat the Oven

  • Preheat your oven to 175°C (350°F). Line a muffin tin with cupcake liners. This helps cupcakes bake evenly and prevents sticking.

Mix Dry Ingredients

  • In a large bowl, combine flour, sugar, baking soda, salt and cocoa powder. Stir well to remove lumps and mix evenly.

Mix Wet Ingredients

  • In another bowl, whisk buttermilk, oil, egg, vanilla extract, red food coloring and vinegar. Mix until smooth and well combined.

Combine Wet and Dry

  • Slowly add wet ingredients into dry mixture. Beat gently until smooth. Do not overmix or cupcakes may become dense.

Fill the Liners

  • Spoon batter into cupcake liners. Fill each liner two-thirds full. This allows space for rising while baking.

Bake the Cupcakes

  • Bake for 18–20 minutes at 175°C (350°F). Insert a toothpick in the center. If it comes out clean, they are ready.

Cool Completely

  • Remove cupcakes from the oven. Let them cool in the pan for five minutes. Transfer to a cooling rack and cool completely before frosting.

Make the Frosting

  • Beat cream cheese and butter until smooth and creamy. Gradually add powdered sugar and vanilla extract. Beat until fluffy and soft.

Frost the Cupcakes

  • Spread frosting on cooled cupcakes using a spatula or piping bag. Decorate with red crumbs or sprinkles if desired.

Notes

  • Use room temperature ingredients for smooth batter.
  • Do not overmix the batter.
  • Measure flour correctly using spoon and level method.
  • Use good quality cocoa powder.
  • Let cupcakes cool fully before frosting.
