Ingredients

  • 1 1/2 pounds pork tenderloin cut into 1-inch cubes
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 3 garlic cloves minced
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional: pita bread tzatziki sauce, chopped fresh parsley for serving

Instructions

Prepare the Marinade

  • In a large bowl, combine olive oil, lemon juice, minced garlic, oregano, salt and pepper. Whisk well until mixed.

Marinate the Pork

  • Add cubed pork to the marinade. Toss well to coat each piece. Cover and refrigerate for at least 2 hours or overnight.

Preheat the Grill

  • Heat your grill or grill pan over medium-high heat. Oil the grates lightly to prevent sticking.

Skewer the Pork

  • Thread the marinated pork cubes onto skewers, leaving a small space between each piece for even cooking.

Grill the Souvlaki

  • Place skewers on the hot grill. Cook 8–10 minutes, turning occasionally, until pork is cooked through and slightly charred.

Serve

  • Arrange skewers on a platter. Serve hot with pita bread, tzatziki sauce, and a sprinkle of fresh parsley if desired.

Notes

  • Marinate pork overnight for maximum flavor and tenderness
  • Cut pork evenly for consistent cooking
  • Use fresh lemon juice for a bright taste
  • Don’t overcrowd the grill to avoid steaming
  • Serve immediately for the best texture and flavor
