Ingredients

  • 4 bone-in pork chops about 1-inch thick
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 2 cloves garlic minced
  • 1 teaspoon fresh thyme leaves
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup chicken broth
  • 1 tablespoon lemon juice

Instructions

Prepare the Pork Chops

  • Pat the pork chops dry with paper towels. Season both sides with salt and black pepper. This helps create a golden crust.

Heat the Skillet

  • Place a large skillet over medium-high heat. Add olive oil and let it warm. The pan must be hot before adding the pork chops.

Sear the Pork Chops

  • Add pork chops to the skillet. Cook without moving them for 3–4 minutes. Turn when golden brown on one side.

Add Butter, Garlic, and Thyme

  • Add butter, minced garlic and fresh thyme to the pan. Spoon melted butter over the chops to add flavor while cooking.

Cook Until Done

  • Cook the pork chops for 3–4 more minutes per side. Check that internal temperature reaches 145°F (63°C) for safety and juiciness.

Add Broth and Lemon Juice

  • Pour chicken broth and lemon juice into the pan. Let it simmer for 1–2 minutes. Spoon sauce over the chops before serving.

Rest the Pork Chops

  • Remove pork chops from the skillet. Let them rest on a plate for 5 minutes. Resting locks in the juices for tender meat.

Serve

  • Serve the pork chops warm. Spoon the pan sauce over them. Enjoy this classic, juicy and flavorful pork dish.

Notes

  • Always pat the pork dry before seasoning.
  • Don’t overcrowd the pan; cook in batches if needed.
  • Use a meat thermometer for perfect doneness.
  • Spoon pan sauce over chops for extra flavor.
  • Let meat rest before serving for juiciness.
