Ingredients
  

  • 1 1/4 cups almond meal almond flour
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 3 –4 ripe peaches peeled and sliced
  • 2 tablespoons sliced almonds for topping
  • Powdered sugar for dusting optional

Instructions
 

Preheat oven

  • Set oven to 350°F (175°C). Grease the springform pan and line the bottom with parchment paper.

Prepare peaches

  • Peel the peaches carefully, remove pits and slice evenly. Set aside on a plate for later assembly.

Mix dry ingredients

  • In a bowl, combine almond meal, all-purpose flour, baking powder and salt. Whisk gently to blend evenly.

Cream butter and sugar

  • In another bowl, beat butter and sugar until light and fluffy using a whisk or mixer.

Add eggs and extracts

  • Beat in eggs, almond extract and vanilla extract until fully incorporated and smooth.

Combine wet and dry

  • Fold the dry ingredients gently into the wet mixture until smooth. Avoid overmixing to keep the torte light.

Pour batter into pan

  • Transfer batter into the prepared springform pan. Spread evenly with a spatula.

Arrange peach slices

  • Place peach slices neatly on top of the batter. Slightly press them in for stability.

Add almond topping

  • Sprinkle sliced almonds over peaches. This adds crunch and a golden finish after baking.

Bake the torte

  • Bake in the oven for 40–45 minutes. The top should be golden and a toothpick comes out clean.

Cool and serve

  • Cool in pan for 10 minutes, then release springform. Let it cool completely. Dust with powdered sugar if desired.
