Ingredients
  

  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter softened
  • 2 cups sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • ½ cup freshly squeezed orange juice
  • Zest of 2 oranges
  • ½ cup buttermilk

For the glaze:

  • ½ cup powdered sugar
  • 2 tablespoons freshly squeezed orange juice

Instructions
 

Preheat the Oven

  • Set oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan to prevent sticking.

Mix Dry Ingredients

  • In a bowl, combine flour, baking powder and salt. Stir well and set aside for later use.

Cream Butter and Sugar

  • In another bowl, beat butter and sugar together until light, fluffy and pale yellow in color.

Add Eggs and Vanilla

  • Add eggs one at a time. Beat well after each addition. Mix in vanilla extract and orange zest.

Combine Wet and Dry Ingredients

  • Add dry ingredients in batches, alternating with buttermilk and orange juice. Mix until smooth and creamy.

Pour Batter into Pan

  • Pour the batter into the prepared loaf pan. Spread evenly using a spatula for smooth surface.

Bake the Cake

  • Place in oven and bake for 60 minutes or until a toothpick comes out clean in the center.

Cool the Cake

  • Let the cake cool in the pan for 10 minutes. Then remove and place on a cooling rack for complete cooling.

Prepare the Glaze

  • In a small bowl, mix powdered sugar and orange juice until smooth. Drizzle over cooled cake for extra flavor.

Serve and Enjoy

  • Slice the cake into pieces. Serve as a dessert, snack or with tea or coffee.
