  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup chopped walnuts or pecans
  • 1 cup grated carrots about 2 medium carrots
  • 1 cup grated apple peeled
  • 3/4 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions
 

Preheat the Oven

  • Preheat oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners. This ensures the muffins bake evenly and do not stick.

Mix Dry Ingredients

  • In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon and nutmeg. Add shredded coconut and chopped nuts. Mix well.

Combine Wet Ingredients

  • In a medium bowl, whisk together sugar, eggs, oil and vanilla extract. Stir until fully combined. This forms the smooth wet mixture for the muffins.

Add Carrots and Apples

  • Fold grated carrots and apples into the wet mixture. Mix gently until evenly distributed. This adds moisture and natural sweetness to the muffins.

Combine Wet and Dry

  • Add the wet ingredients to the dry ingredients. Stir gently until just combined. Avoid overmixing to keep muffins light and fluffy.

Fill Muffin Cups
