Ingredients
  

  • Chicken breasts – 4 pieces
  • Olive oil – 2 tablespoons
  • Garlic – 3 cloves minced
  • Cherry tomatoes – 2 cups halved
  • Kalamata olives – 1 cup pitted
  • Lemon juice – 2 tablespoons
  • Lemon zest – 1 teaspoon
  • Dried oregano – 1 teaspoon
  • Salt – 1 teaspoon
  • Black pepper – ½ teaspoon
  • Fresh parsley – 2 tablespoons chopped
  • Chicken broth – ½ cup

Instructions
 

Prepare the Chicken

  • Pat chicken dry with paper towels. Season with salt, pepper and oregano. This adds flavor and helps browning.

Sear the Chicken

  • Heat olive oil in a skillet. Add chicken and cook 4 minutes each side. Cook until golden brown.

Remove Chicken from Pan

  • Place chicken on a plate to rest. This keeps it juicy while you make sauce.

Cook Garlic and Tomatoes

  • Add garlic to the same skillet. Cook for 30 seconds. Add cherry tomatoes and cook until soft.

Add Olives and Lemon

  • Stir in olives, lemon juice and zest. Let the flavors mix for a minute.

Add Broth and Simmer

  • Pour chicken broth into the pan. Let it simmer for 2 minutes. The sauce will become slightly thick.

Return Chicken to Pan

  • Place chicken back in the skillet. Spoon sauce over the top. Cook for 5 more minutes.

Garnish and Serve

  • Sprinkle chopped parsley on top. Serve hot with sauce spooned over the chicken.
