Ingredients
  

  • 2 cups mixed olives drained
  • ¼ cup olive oil
  • 2 cloves garlic sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon red pepper flakes
  • Zest of 1 orange
  • Zest of 1 lemon
  • 1 tablespoon fresh parsley chopped

Instructions
 

Heat the Olive Oil

  • Place a saucepan over low heat. Add olive oil and sliced garlic. Warm gently until garlic smells fragrant. Do not brown the garlic.

Add Herbs and Spices

  • Add oregano, thyme and red pepper flakes. Stir slowly. Let the oil warm and release herb flavors for two minutes.

Add Citrus Zest

  • Add orange and lemon zest to the pan. Stir gently. The citrus oils will blend into the warm olive oil.

Add the Olives

  • Add drained olives to the pan. Stir to coat all olives with the warm oil mixture. Heat gently for five minutes.

Finish and Rest

  • Turn off heat. Let olives rest for ten minutes. Stir in chopped parsley before serving for fresh flavor.
