Ingredients
  

  • 1 pound carrots peeled and cut
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 1 tablespoon butter melted
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon fresh parsley chopped (optional)

Instructions
 

Preheat the oven

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment.

Prepare the carrots

  • Peel carrots and cut into sticks. Try to make them same size.

Mix the glaze

  • In a bowl, mix olive oil, maple syrup and melted butter.

Season the carrots

  • Add salt and pepper. Toss until carrots are fully coated.

Arrange on baking sheet

  • Spread carrots in a single layer. Don’t overcrowd them.

Roast in the oven

  • Bake for 20 minutes. Then toss and bake 5 more minutes.

Check for tenderness

  • Carrots should be soft and slightly caramelized.

Add parsley and serve

  • Sprinkle parsley on top. Serve warm and enjoy.

Notes

  • Use carrots that are similar size for even cooking.
  • Don’t overcrowd the pan, or they won’t caramelize.
  • Roast at high heat for the best color.
  • Toss halfway to cook evenly.
