Ingredients

  • 2 cups elbow macaroni
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup celery chopped
  • ½ cup red bell pepper chopped
  • ½ cup green onions sliced
  • 2 hard-boiled eggs chopped (optional)
  • 2 tablespoons fresh parsley chopped

Instructions

Cook the Pasta

  • Bring a large pot of salted water to boil. Add elbow macaroni and cook until al dente. Drain in a colander and rinse with cold water. Let it cool completely.

Prepare the Dressing

  • In a small bowl, mix mayonnaise, Dijon mustard, apple cider vinegar, sugar, salt and black pepper. Stir until smooth. This creates a creamy, tangy dressing.

Chop the Vegetables

  • Chop celery, red bell pepper, green onions and hard-boiled eggs. Place them in a large mixing bowl. Fresh, crisp vegetables make the salad flavorful and colorful.

Combine Pasta and Vegetables

  • Add the cooled pasta to the mixing bowl with vegetables. Stir gently to mix everything evenly. Make sure pasta is well coated with the dressing.

Add Dressing and Herbs

  • Pour the prepared dressing over pasta and vegetables. Add chopped parsley. Mix gently until all ingredients are evenly coated with dressing. This gives the salad a fresh flavor.

Chill the Salad

  • Cover the bowl and refrigerate for at least one hour before serving. Chilling allows the flavors to blend perfectly. Serve cold for a refreshing summer side.

Serve and Enjoy

  • Scoop the macaroni salad onto plates or bowls. Garnish with extra parsley or sliced eggs if desired. Enjoy it with your favorite summer meals.

Notes

  • Use fresh vegetables for the best flavor and crunch.
  • Cook pasta just until al dente; avoid overcooking.
  • Chill the salad for at least one hour for better flavor.
  • Mix dressing separately first to ensure smooth texture.
  • Add parsley at the end to keep it bright and fresh.
