Ingredients
  

  • 2 tablespoons butter
  • 1 onion chopped
  • 2 celery stalks chopped
  • 2 cloves garlic minced
  • 3 cups corn kernels fresh or frozen
  • 2 potatoes peeled and diced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 pound cooked lobster meat chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika optional
  • Fresh parsley for garnish

Instructions
 

Melt butter in pot

  • Heat butter over medium heat until melted and bubbly.

Cook onions and celery

  • Add onion and celery. Cook until soft and fragrant.

Add garlic

  • Stir in garlic and cook for one minute.

Add corn and potatoes

  • Add corn kernels and diced potatoes. Stir well.

Pour in broth

  • Add broth and bring to a boil.

Simmer until potatoes soften

  • Lower heat and simmer for 15 minutes until potatoes are tender.

Blend some soup

  • Use blender or immersion blender for creamy texture.

Add cream and season

  • Stir in heavy cream, salt, pepper and paprika.

Add lobster meat

  • Add lobster and cook for 3 minutes only.

Garnish and serve

  • Top with parsley and serve hot with bread.
