Ingredients

  • 1 pound linguine pasta
  • 1/2 cup unsalted butter
  • 1/4 cup olive oil
  • 6 cloves garlic minced
  • 1/2 teaspoon red pepper flakes optional
  • 1 pound large shrimp peeled and deveined
  • 1/4 cup dry white wine
  • Juice of 1 lemon
  • Salt and black pepper to taste
  • 1/4 cup chopped fresh parsley

Instructions

Cook the Linguine

  • Boil a large pot of salted water. Cook linguine according to package instructions until al dente. Drain and set aside, reserving a little pasta water.

Prepare Garlic Butter Sauce

  • In a large skillet, melt butter with olive oil over medium heat. Add minced garlic and red pepper flakes. Sauté until fragrant, about 1–2 minutes.

Cook the Shrimp

  • Add shrimp to the skillet. Season with salt and black pepper. Cook until pink and opaque, about 2–3 minutes per side.

Add Wine and Lemon

  • Pour in white wine and lemon juice. Stir gently and let it simmer for 1–2 minutes. The sauce will slightly reduce and intensify in flavor.

Combine Pasta and Sauce

  • Add cooked linguine to the skillet. Toss well to coat pasta with garlic butter and shrimp. Add a little reserved pasta water if needed to loosen sauce.

Add Fresh Parsley

  • Sprinkle chopped fresh parsley over the pasta. Toss again gently. This adds color and fresh flavor to the dish.

Serve Immediately

  • Transfer linguine with shrimp scampi to serving plates. Garnish with extra parsley or lemon wedges if desired. Serve hot for best taste.

Notes

  • Use fresh shrimp for the best flavor and texture.
  • Do not overcook shrimp; they cook very quickly.
  • Reserve pasta water to adjust sauce consistency.
  • Use fresh lemon juice for bright, zesty flavor.
  • Toss pasta gently to avoid breaking linguine strands.
