Ingredients
  

  • 4 lamb shanks
  • 2 tablespoons olive oil
  • 1 onion chopped
  • 3 garlic cloves minced
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 1 cup dry red wine
  • 2 cups beef or chicken stock
  • 1 can 14 oz crushed tomatoes
  • 2 teaspoons fresh rosemary chopped
  • 1 teaspoon fresh thyme chopped
  • 1 bay leaf
  • Salt and black pepper to taste
  • Optional: fresh parsley for garnish

Instructions
 

Preheat Oven

  • Preheat oven to 350°F (175°C). This ensures even cooking for tender, juicy lamb shanks.

Season the Lamb Shanks

  • Pat lamb dry and season generously with salt and pepper. This adds flavor and helps with browning.

Brown the Lamb

  • Heat olive oil in a large oven-safe pot. Brown lamb shanks on all sides for rich flavor.

Sauté Vegetables

  • Add chopped onion, garlic, carrots and celery. Cook until softened, stirring occasionally. This enhances the sauce.

Deglaze with Wine

  • Pour in red wine to deglaze the pot. Scrape browned bits from the bottom to add depth of flavor.

Add Stock and Tomatoes

  • Add beef stock, crushed tomatoes, rosemary, thyme and bay leaf. Stir gently to combine ingredients.

Simmer and Cover

  • Bring to a simmer on the stove for 5 minutes. Cover with a lid for even slow cooking.

Bake in Oven

  • Transfer pot to the preheated oven. Bake for 2–2.5 hours until lamb is tender and sauce thickens.

Garnish and Serve

  • Remove lamb from pot and sprinkle with fresh parsley. Serve warm with sauce spooned over the top.
