Ingredients
  

  • 1 cup unsalted butter softened
  • 2/3 cup sugar
  • 1 teaspoon vanilla extract
  • 2 cups all purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup raspberry jam or any favorite jam
  • Optional: shredded coconut or chopped nuts for coating

Instructions
 

Cream the butter and sugar

  • Beat butter and sugar together until light and fluffy. This step traps air. It helps cookies become tender and soft after baking.

Add vanilla and dry ingredients

  • Add vanilla, flour and salt to the bowl. Mix gently until dough forms. Do not overmix or cookies may become tough and dry.

Shape the dough balls

  • Roll small dough balls using your hands. Keep sizes the same for even baking. Place them on lined baking sheet with space between.

Make thumbprints in the dough

  • Press your thumb or spoon in each ball gently. Make a small well in center. This space will hold the shiny sweet jam filling.

Fill with jam

  • Spoon a little jam into each well carefully. Do not overfill or it spills. Use any flavor you love like strawberry or apricot.

Bake the cookies
