Ingredients
  

  • 2 cups sharp cheddar cheese freshly grated
  • 1 cup all-purpose flour
  • ½ cup unsalted butter softened
  • 2 fresh jalapenos finely chopped (seeds removed for less heat)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons cold water

Instructions
 

Prepare the Oven

  • Preheat your oven to 375°F. Line a baking sheet with parchment paper. This helps prevent sticking. Set everything ready before mixing the dough.

Mix Butter and Cheese

  • In a large bowl, beat softened butter and grated cheddar cheese. Mix until smooth and creamy. The mixture should look light and fluffy.

Add Dry Ingredients

  • Add flour, salt and black pepper. Mix slowly until combined. Do not overmix. The dough will look crumbly at this stage.

Add Jalapenos

  • Stir in the finely chopped jalapenos. Mix gently so they spread evenly in the dough. Add cold water slowly if needed.

Shape the Dough

  • Place dough on a clean surface. Form into a log shape. Wrap in plastic wrap. Chill in the fridge for 30 minutes.

Slice the Crackers

  • Remove the chilled dough from the fridge. Slice into thin rounds using a sharp knife. Try to keep slices even.

Bake Until Golden

  • Place slices on the prepared baking sheet. Bake for 12 to 15 minutes. Bake until edges turn golden brown.

Cool Before Serving

  • Remove from oven carefully. Let crackers cool on a rack. They become crispier as they cool down.
