  • 3 pounds chicken thighs bone-in, skin-on

  • 1/2 cup honey
  • 1/4 cup ketchup
  • 1 tablespoon garlic minced
  • 1 tablespoon fresh ginger grated
  • 2 tablespoons vegetable oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon crushed red pepper flakes
  • Salt to taste
  • Black pepper to taste
  • Chopped cilantro for garnish optional

Instructions
 

Prepare the chicken

  • Pat chicken dry with paper towels which helps skin crisp better and lets marinade stick well to surface.

Make the marinade

  • Whisk soy sauce, honey, ketchup, garlic, ginger, oil, lime juice, salt, pepper and chili flakes together until fully blended.

Marinate the chicken

  • Place chicken in bowl with marinade. Turn pieces to coat completely. Let rest at least thirty minutes for flavor absorption.

Preheat the oven

  • Heat oven to three hundred seventy five degrees. Line baking pan with foil to make cleaning easier after cooking sticky sauce.

Arrange chicken in pan

  • Place chicken pieces skin side up in pan. Pour extra marinade over top so meat cooks in flavorful liquid during baking.

Bake the chicken

  • Bake about forty five minutes until chicken is cooked through and skin looks browned and slightly caramelized from honey.

Baste during cooking
