Ingredients

  • 2 cups old-fashioned rolled oats
  • 1/2 cup sliced almonds
  • 1/2 cup chopped walnuts
  • 1/2 cup honey
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup dried cranberries or raisins
  • 1/2 cup chocolate chips optional

Instructions

Preheat the Oven

  • Preheat oven to 350°F (175°C). Line a 9x9 inch pan with parchment paper.

Toast the Nuts and Oats

  • Spread oats and nuts on a baking sheet. Bake for 10 minutes. Stir once.

Prepare the Syrup

  • In a small saucepan, heat honey, butter and brown sugar. Stir until melted.

Add Vanilla and Salt

  • Remove saucepan from heat. Stir in vanilla extract and a pinch of salt.

Mix Everything Together

  • In a large bowl, combine toasted oats, nuts and dried fruit. Pour syrup over it.

Combine Well

  • Use a wooden spoon to mix everything evenly. Make sure syrup coats all ingredients.

Transfer to Pan

  • Press mixture into the prepared baking pan. Use a spatula to press firmly.

Bake the Bars

  • Bake in preheated oven for 15 minutes. Keep an eye to prevent burning.

Cool Completely

  • Let pan cool completely on a wire rack. Cooling is important to cut bars easily.

Cut Into Bars

  • Lift mixture using parchment paper. Cut into 12 equal-sized bars using a sharp knife.

Notes

  • Use fresh nuts for better flavor and crunch.
  • Press mixture firmly into the pan to prevent crumbling.
  • Toast oats lightly for deeper flavor.
  • Let bars cool completely before cutting.
  • Add chocolate chips after baking to avoid melting.
