Ingredients
  

  • 6 ripe tomatoes chopped
  • 1 cucumber peeled and chopped
  • 1 red bell pepper chopped
  • 1 small red onion chopped
  • 2 cloves garlic minced
  • 2 tablespoons red wine vinegar
  • ¼ cup olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup tomato juice
  • Fresh basil or parsley for garnish

Instructions
 

Prepare the Vegetables

  • Wash, peel and chop tomatoes, cucumber, bell pepper and onion. Keep pieces small for easier blending.

Add Garlic and Vinegar

  • Place minced garlic and red wine vinegar in the blender. This gives tangy flavor and aroma to the soup.

Blend the Vegetables

  • Add chopped tomatoes, cucumber, bell pepper and onion to the blender. Blend until smooth and creamy.

Add Olive Oil and Tomato Juice

  • Pour in olive oil and tomato juice. Blend again to combine all ingredients into a silky soup.

Season the Soup

  • Add salt and black pepper. Blend again briefly. Taste and adjust seasoning as needed.

Chill the Gazpacho

  • Transfer soup to a large bowl. Cover and refrigerate for at least 1 hour before serving.

Garnish and Serve

  • Ladle soup into bowls. Garnish with fresh basil or parsley. Serve cold for best flavor and refreshment.

Notes

  • Use ripe, fresh tomatoes for the best flavor.
  • Chill the soup for at least one hour.
  • Blend until smooth but leave a little texture if desired.
