Ingredients
  

  • Boneless chicken breasts – 2 large cut in halves
  • Buttermilk – 1 cup
  • All-purpose flour – 1½ cups
  • Cornstarch – ¼ cup
  • Eggs – 2
  • Garlic powder – 1 teaspoon
  • Paprika – 1 teaspoon
  • Salt – 1 teaspoon
  • Black pepper – ½ teaspoon
  • Oil for frying – as needed
  • Brioche buns – 4
  • Lettuce leaves – for serving
  • Pickles – sliced optional
  • Mayonnaise – ¼ cup

Instructions
 

Marinate the Chicken

  • Place chicken pieces in a bowl. Pour buttermilk over them. Cover and rest for at least 30 minutes. This step keeps chicken tender and juicy.

Prepare the Coating

  • In a bowl, mix flour, cornstarch, garlic powder, paprika, salt and pepper. In another bowl, whisk eggs until smooth.

Coat the Chicken

  • Remove chicken from buttermilk. Dip into egg mixture. Then coat well with flour mix. Press gently so coating sticks well.

Fry the Chicken

  • Heat oil in a deep pan over medium heat. Fry chicken until golden and crispy. Cook each side about 6 to 7 minutes.

Assemble the Sandwich

  • Toast the buns lightly. Spread mayonnaise on buns. Add fried chicken, lettuce, and pickles. Close the bun and serve hot.

Notes

  • Use buttermilk for tender chicken
  • Let coating rest on chicken for better crunch
  • Fry at medium heat for even cooking
  • Use a thermometer to check doneness
