Ingredients
  

  • 2 filet mignon steaks 6 oz each
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 cloves garlic smashed
  • 2 sprigs fresh rosemary
  • Salt to taste
  • Black pepper to taste
  • Optional: 1 tsp Dijon mustard

Instructions
 

Preheat your oven

  • Preheat oven to 425°F. Make sure your oven is hot before cooking.

Season the steaks

  • Pat steaks dry with paper towel. Season both sides with salt and pepper.

Heat the skillet

  • Heat an oven-safe skillet over high heat. Add olive oil and heat until hot.

Sear the steaks

  • Place steaks in skillet. Sear for 2 minutes on each side.

Add butter and garlic

  • Add butter, garlic and rosemary to skillet. Spoon melted butter over steaks.

Transfer to oven

  • Put the skillet in the oven. Roast for 6–8 minutes for medium-rare.

Check the temperature

  • Use a meat thermometer. 130°F is medium-rare, 140°F is medium.

Rest the steaks

  • Remove steaks and cover with foil. Let them rest for 5 minutes.

Slice and serve

  • Slice the steaks against the grain. Pour the butter sauce over them.

Notes

  • Use room temperature steaks for even cooking.
  • Pat steaks dry to get a good sear.
  • Use a hot skillet for a nice crust.
  • Don’t overcrowd the pan.
  • Let the steak rest before slicing.
