Ingredients

  • 4 cups watermelon cubed
  • 1 cup feta cheese crumbled
  • 1/4 cup fresh mint leaves chopped
  • 1/4 cup red onion thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • Salt to taste
  • Black pepper to taste

Instructions

Cut the Watermelon

  • Cut the watermelon into bite-size cubes. Remove seeds if needed for easy eating.

Slice the Onion

  • Slice red onion thinly. Soak it in cold water for five minutes to reduce sharp taste.

Chop the Mint

  • Chop fresh mint leaves. This adds a bright, fresh aroma to the salad.

Make the Dressing

  • In a small bowl, mix olive oil, lime juice, honey, salt and pepper.

Combine Watermelon and Onion

  • Add watermelon and onion into a large bowl. Toss gently to mix.

Add Feta Cheese

  • Sprinkle crumbled feta over the watermelon. Mix carefully to keep chunks intact.

Add Mint

  • Add chopped mint to the bowl. Toss gently to spread the flavor.

Pour Dressing

  • Pour the dressing over the salad. Toss lightly to coat all ingredients.

Chill Before Serving

  • Chill the salad in the fridge for ten minutes. This makes it extra refreshing.

Notes

  • Use fresh, ripe watermelon for best sweetness.
  • Chill ingredients before mixing for a cool salad.
  • Use good quality feta for a creamy taste.
  • Do not mix too hard to avoid crushing watermelon.
  • Add mint last to keep it bright and fresh.
