Ingredients
  

  • 2 large fennel bulbs thinly sliced
  • 3 large oranges peeled and sliced
  • 1 small red onion very thinly sliced
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh orange juice
  • 1 tablespoon fresh lemon juice
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley or mint chopped, for garnish

Instructions
 

Prepare the Fennel

  • Wash fennel bulbs well. Remove tough ends. Slice very thin for best texture and mild flavor.

Cut the Oranges

  • Peel oranges carefully. Remove white pith. Slice into thin rounds or half-moons.

Slice the Onion

  • Peel red onion. Slice it very thin. This keeps the taste soft and balanced.

Make the Dressing

  • In a small bowl, mix olive oil, orange juice, lemon juice, salt and pepper.

Combine Everything

  • Add fennel, oranges and onion to a large bowl. Pour dressing on top.

Toss the Salad
