Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper
  • 1 lemon cut in half
  • 1 head garlic cut in half
  • 1 bunch fresh thyme
  • 1 large yellow onion sliced

Instructions
 

Preheat the Oven

  • Heat oven to 425°F. This high heat helps create crispy skin and juicy chicken meat inside.

Prepare the Chicken

  • Remove giblets from chicken. Pat chicken dry completely using paper towels inside and outside.

Season the Chicken

  • Rub olive oil all over chicken. Sprinkle salt and pepper generously on skin and cavity.
