Ingredients
  

  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • 3 tablespoons orange zest from 2 oranges
  • ½ cup unsalted butter softened
  • 3 large eggs
  • ½ cup orange juice freshly squeezed
  • 1 cup fresh cranberries
  • ½ cup chopped walnuts optional
  • 1 teaspoon vanilla extract

For the glaze:

  • ½ cup powdered sugar
  • 2 tablespoons orange juice

Instructions
 

Preheat the Oven

  • Set your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.

Mix Dry Ingredients

  • In a bowl, combine flour, baking powder, baking soda and salt. Stir to mix well.

Combine Sugar and Orange Zest

  • Rub sugar and orange zest together with your fingers. This releases natural oils and flavor.

Cream Butter and Sugar

  • In another bowl, beat butter and sugar mixture until light and fluffy using a wooden spoon.

Add Eggs and Vanilla

  • Add eggs one at a time. Stir in vanilla extract until smooth and combined.

Add Orange Juice

  • Pour in orange juice slowly. Mix until batter is even and creamy.

Combine Wet and Dry Ingredients

  • Add dry ingredients to wet mixture. Stir until just combined. Do not overmix.
