Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 3 cups old-fashioned oats
  • 1 cup shredded coconut
  • 1 cup chopped walnuts or pecans
  • 1 cup chocolate chips
  • 1 cup butterscotch chips optional

Instructions
 

Preheat the oven

  • Preheat oven to 350°F. Line a baking sheet with parchment paper.

Cream the butter and sugar

  • Beat butter, brown sugar and sugar until fluffy and light.

Add eggs and vanilla

  • Add eggs one at a time. Mix well. Stir in vanilla extract.

Mix dry ingredients

  • In another bowl, combine flour, baking soda, baking powder, salt and cinnamon.

Combine wet and dry

  • Slowly add dry mix into wet mix. Stir until smooth and even.

Add oats and coconut

  • Fold in oats and shredded coconut until well mixed.

Add nuts and chips

  • Stir in nuts, chocolate chips, and butterscotch chips if using.

Shape the cookies

  • Use a spoon to drop dough onto the sheet. Leave space between cookies.

Bake the cookies

  • Bake for 10 to 12 minutes until edges turn golden brown.

Cool on rack

  • Let cookies cool on the sheet for five minutes. Transfer to a rack to cool fully.

Notes

  • Use room temperature butter for easy mixing.
  • Chill the dough for 15 minutes for thicker cookies.
  • Do not overbake to keep them soft inside.
  • Use old-fashioned oats for best texture.
  • Add more chocolate chips for extra sweetness.
