Ingredients
  

  • 4 cups fresh or frozen corn kernels
  • 1 cup heavy cream
  • ½ cup whole milk
  • 3 large eggs
  • ½ cup unsalted butter melted
  • ¼ cup sugar
  • ½ cup all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions
 

Preheat the Oven

  • Preheat your oven to 350°F. Grease a 9x9 inch baking dish with butter. This prevents sticking and helps easy serving later.

Blend the Corn

  • Place two cups of corn into a blender. Blend until smooth but slightly textured. This gives the pudding a creamy base.

Mix Wet Ingredients

  • In a large bowl, whisk eggs, cream, milk and melted butter. Mix until smooth and fully combined.

Add Dry Ingredients

  • Add flour, sugar, salt and pepper into the wet mixture. Whisk well so no lumps remain.

Combine Everything

  • Add blended corn and remaining whole corn kernels. Stir gently with a spatula. Make sure everything mixes evenly.

Pour into Baking Dish

  • Pour the mixture into the prepared baking dish. Spread evenly using a spatula for smooth baking.

Bake Until Set

  • Bake for 40 to 45 minutes. The center should be firm but slightly soft. The top will look light golden.

Cool and Serve
