Ingredients
  

  • 2 tablespoons olive oil
  • 1 onion chopped
  • 3 garlic cloves minced
  • 1 red bell pepper diced
  • 1 can crushed tomatoes 28 ounces
  • 1 cup seafood stock
  • 1 cup dry white wine
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt to taste
  • Black pepper to taste
  • 1 pound firm white fish chunks
  • 1 pound shrimp peeled and deveined
  • 1 pound mussels cleaned
  • 1 pound clams cleaned
  • Fresh parsley for garnish
  • Lemon wedges for serving

Instructions
 

Sauté the base

  • Heat oil in large pot over medium heat. Add onion, garlic and pepper. Cook gently until soft and sweet smelling.

Build the broth

  • Pour in tomatoes, seafood stock and white wine. Stir in oregano, basil, salt, and pepper. Let it simmer so flavors mix well.

Add the fish

  • Place fish pieces gently into simmering broth. Do not stir too hard. Cook slowly so fish stays tender and does not break apart.

Add shrimp and shellfish

  • Add shrimp, mussels and clams to pot. Cover with lid and cook carefully. Shells open and shrimp turns pink when done perfectly.

Finish and serve

  • Taste broth and adjust seasoning if needed. Sprinkle fresh parsley on top. Serve hot with bread and lemon wedges for bright flavor.

Notes

  • Use very fresh seafood always
  • Do not overcook or seafood gets tough
  • Let broth simmer for deep flavor
  • Use firm fish that does not fall apart
  • Add chili flakes if you like heat
  • Serve with crusty bread for dipping
  • Use good quality white wine
