Equipment

  • Medium saucepan
  • Heatproof bowl
  • Whisk
  • Electric mixer
  • Mixing bowls
  • Rubber spatula
  • Serving glasses or bowls

Ingredients

  • Dark chocolate – 8 ounces chopped
  • Unsalted butter – 2 tablespoons
  • Large eggs – 3 separated
  • Granulated sugar – ¼ cup
  • Heavy cream – 1 cup cold
  • Vanilla extract – 1 teaspoon
  • Salt – 1 small pinch

Instructions

Melt the Chocolate

  • Place chopped dark chocolate and butter in a heatproof bowl over simmering water. Stir until smooth and shiny, then remove from heat to cool slightly.

Whisk the Egg Yolks

  • Add egg yolks to the warm chocolate mixture. Stir slowly until smooth and glossy. Let it cool while preparing other parts.

Beat the Egg Whites

  • In a clean bowl, add egg whites and pinch of salt. Beat until soft peaks form, slowly add sugar and beat until stiff peaks form.

Whip the Cream

  • Pour cold heavy cream into another bowl. Add vanilla extract and beat until soft peaks form. Cream should be light and fluffy, not overbeaten.

Fold Everything Together

  • Gently fold whipped cream into chocolate mixture. Fold in beaten egg whites slowly. Use light movements to keep mousse airy and soft.

Chill the Mousse

  • Spoon mousse into serving glasses or bowls. Cover and refrigerate for at least two hours to set and become creamy.

Notes

  • Use high-quality dark chocolate for deep flavor
  • Ensure bowls are clean before beating egg whites
  • Fold gently to keep air inside
  • Chill long enough for best texture
  • Serve cold
